Chef Chadi Cheaitany was born in Beirut, Lebanon. Growing up in a family where the culinary roots run as deep as the local Grape vines gave Chef Chadi the passion as well as the knowledge for cooking traditional Lebanese cuisine. Like Chef Chadi most of his family members own or manage restaurants in different parts of the world where they bring the taste of Lebanon. Here in Malta Chef Chadi brings all his experience fusing together the local Maltese elements and imported directly from Lebanon ingredients for preparing recipes kept in the family for generations.

He started his career back in the early 1997 as Assistant Chef de Partie in Switzerland where he helped develop new concepts of Italian and Swiss cuisine. During this time he went through several courses at Gastro Swiss Zurich, to be awarded the Gastro Swiss Diploma in 2003. Soon he became the Executive Sous Chef of a restaurant in Rapperswil-Jona by the Lake Zurich. After leading it for 5 years he took the decision to move back to the Middle East where he could enhance his professional skills and build an international experience.

In 2006 Chef Chadi opened Al Merkaaz Restaurant in Souk Madinat Jumeirah where he developed a fusion of Continental and Lebanese food. In the next years he opened three more outlets as a part of the company’s portfolio – in Dubai Mall, Jumeirah Beach Residence, Dubai Media City.

His passion for spreading the Lebanese culinary traditions worldwide made him always look for new opportunities. During the two years he spent in Africa he was a Consultant Chef for a new restaurant Le Bistrot 66 NK and then moved back to Lebanon where he spent a year working at Nintheen offering Lebanese cuisine with an American twist.

Opening Byblos Lebanese Restaurant in one of the best-preserved areas of northern Malta was what brought Chef Chadi to the middle of the Mediterranean.
